In 2025, chef Alejandro Cuatepotzo pays homage to his Pueblan roots once again, offering a deeply personal interpretation of this classic dish based on his family recipe.
Cuatepotzo shares, “This is the recipe that has always been present in my life. I am Pueblan, and Chiles en Nogada has been a part of my story since childhood. Today, I prepare it using ingredients sourced from Calpan, Puebla, a region crucial to the history of this dish.”
A Complete Culinary Experience
For those seeking a comprehensive experience, Arango Cantina offers the “Desde la raíz” menu, a three-course journey:
- First Course: Consomé of rain mushrooms and calabaza flower or fresh salad with goat cheese and roasted fruit.
