The Story of Purificación Laboratorio de Destilados

Garbiñe Galindo, a chemical engineer and founder of Purificación Laboratorio de Destilados, explained her passion for the engineering processes and destilates to El Economista. She became fascinated with what differentiated one spirit from another, such as rum, tequila, and gin.

“I decided to study the craft of a master distiller, learning how to produce all types of destilates, focusing on gin. I also have a mezcal certification,” Galindo said. “The idea behind Purificación is to create unique beverages distinct from commercially available options, allowing individuals to develop or craft their own gin.”

Purificación Laboratorio de Destilados began around 10 years ago with the goal of creating Mexican destilates that differed from typical agave-based spirits.

“I invite everyone to explore this innovative concept,” Galindo added. “It’s not just a tasting experience; it’s a fully interactive experience where participants engage all their senses and learn valuable insights that are not easily accessible otherwise.”

Gin Botanicals and History

Gin is made from a blend of flowers, roots, herbs, and plants, along with juniper berries. The infusion of these botanicals into a fermented base, such as grain, cane, or grape alcohol, gives gin its distinctive flavor.

Gin’s History

Gin originated in the Netherlands during the 17th century as a medicinal beverage. The word “gin” comes from the Dutch term “jenever,” meaning juniper.

Gin gained immense popularity in England, leading to the “Gin Craze” or “Gin Madness,” a period marked by excessive consumption, especially among working-class society due to its low cost and wide availability. The English refined gin into the spirit we know today.
