Chef David Castro Hussong’s Culinary Philosophy
At the helm of The Silent Tiger’s kitchen is Chef David Castro Hussong. His culinary philosophy blends tradition and innovation, creating a powerful and honest menu. His dishes, such as the golden northern empanada filled with smoked fish and pressed pork or guised octopus served with crispy tripe and fresh tortillas, speak of textures and contrasts. His unique approach has made The Silent Tiger a culinary reference in just three years.
Three Years, Three Wines
To commemorate its third anniversary, The Silent Tiger has launched a trilogy of exclusive wines crafted in collaboration with Bodega Aborigen and enologist Lucas D’Acosta. Named “Vinos del Tigre,” this collection embodies the restaurant’s identity:
- Blanco del Tigre: A blend of Chenin Blanc, Chardonnay, and Ugni Blanc, fermented in barrels for four months. This wine pairs perfectly with subtly fatty dishes like shrimp fideo or spinach empanadas.
- Naranja del Tigre: A Palomino macerated for two weeks with oxidative remontado, spiced, and structured. Ideal for pairing with octopus pipián de aceituna or tuna with avellana butter.
- Tinto del Tigre: A Grenache from the San Vicente Valley, untouched by barrels, fresh and fruity. Served slightly chilled to accompany spiced carnitas, ribs, or tacos.
The Silent Roar of Roma Norte
In a neighborhood where new culinary concepts open daily, The Silent Tiger has carved its niche through consistency, flavor, and authenticity. Its anniversary celebrates not only three years of existence but also its core principles: here, one cooks and drinks with identity. The wines and dishes speak of the chef’s experience and identity.
