He worked in hotel kitchens, including those of the Rex in Veracruz and Latino in Cuernavaca, before establishing a dining room at the Hotel El Savoy. His motivation wasn’t luxury, but the chance to build a home in an unfamiliar land. From there, the family continued cooking.
